High schoolers in tanzania/zanzibar

I am planning a trip to Tanzania for a non-profit group out of California, USA for some high school-age students. We are interesting in participating, joining some groups of peoples-past trips in other countries have involved herding practices, instrument making, art and culture, restoration. We have a whole month. I have a background in marine ecology, but the north may be easier to meet with some more traditional communities. any ideas on areas, cities or groups of people? thanks for your help! I am so confused on where to begin looking for groups of peoples that we would be able to join/support for the month of July. thanks so much!!
