Why is it difficult for low income countries to achieve food security?

Food security is a serious issue in developing countries. paradoxically all developing countries have vast fertile land and abundant sunshine that can be harnessed for agricultural purposes. My question is why is it difficult for low income countries to achieve food security.

because most of the fertile land in developing countries is owned by larger companies and corporations such as nestle etc... and are thus used as cash crops. also the US provides developing countries with money loans to help them out however they give countries money even if they know the country cant repay them.. then the country is indebted to them and alot of the time crops grown are again used as cash crops and what not

I can't pretend to be any kind of expert, but I like the answer above. 'Follow the money', as they say. I'm curious to see what others think about this.
