What sort of classroom projects would you develop for students and teachers to adapt themselves to the usage of IT in the classroom?

I have experienced these kinds of project way back in my secondary level. We call it Telecollaborative projects, and we did it in both English or Literature and all Science subjects. We exhange literary works and provide comments on other's work. In science subjects, there are on-going research and experimental projects, and we performed it and also we exchanged and presentthe results. Students who participated came from different countries, mostly in Europe and America.

I think any project can be implemented with technology. It is up to the teachers how they want to use it. If I'm the teacher, I would assign the student to design a presentation of the project using technology in anyway. For example, the student may design to present the project by using a short film to explain their project.

Another way is using technology to help with their project. I mean like a scientific project which is complicated so technology will come in handy. It will help the student to work easier on the project.

Those are my two opinions for the projects.

Both of those are very good ideas! I myself had something similar though we didn't use it for any subject in particular. We had this project where we communicated with kids in the UK using e-mail to exchange ideas and to share info on our background and all. It was called the Malaysia-British School Link. It was a great experience I would say and definitely thought me something new.
