Guardian Unlimited has an awesome idea. So i just borrow from there for a TIg thread
What is ur cheap and healthy receipt?
Send us your favourite recipe for a quick, healthy and tasty meal that won't break the bank, originality, ease of cooking , and share how you came across the recipe.
(After posting here on TIG, if u wanna win a prize of Guardian u can send ur receipt to : news.competition@guardianunlimited.co.uk by May 31)
but do post on TIG before u send to Guardian

This is not a meal, but accompanies most of my lunches and dinners as it is a simple, tasty, and inexpensive salad 'base'.
About 4 tomatoes to 1 onion to 1 (very small!) garlic clove
Salt and olive oil
Just finely chop the onion, garlic and tomatoes, sprinkle with olive oil and a little salt and you have a delicious base which can be added to any dinner or made into something more interesting.
I have combined:
Cooked or raw broccoli pieces
Chopped beetroot
Grated carrot
Sweetcorn
Spinach
Kale
Olives
Lettuce
Cucumber
And much more.....
Enjoy!
