Recipes For Bread Making

I have been working for the past 12 years in the banking sector in Nigeria. But the environment does not favour my profession as a Secretary, thus I have not received much of the upward climb. I want to resign and face life squarely on my own. That will enable me do many other things I've developed interest in. The first of which is going into bakery (bread making).
I solicit ideas and knowledge from members who are or may have been into this area of life. I will appreciate electronic notes and handbooks on bakery.
Any idea or contribution towards this request will be highly appreciate.

Here's a bakery I worked at a long time ago.

They make all their products from scratch and user fresh ingredients. I really don't know much about starting a bakery, but I have worked at a few different ones and can maybe answer some specific questions. = )

i may not know very much about bread-making, but i can tell you that you might learn some things about food production and entrepreneurship in our next TIG Monthly Theme on Food!
